Spinach Quiche

GranolaSpinach Quiche

This quiche is so good even kitties can't get enough! You can make this with any combination of veggies or meat or whatever else you like.

Ingredients:

one pie crust
2 tbsp. butter
1 or 2 shallots
1 leek
2 c. mushrooms
3 oz. spinach
4 oz. Gruyere cheese
5 large eggs
1/2 c. whipping cream
1 tsp. salt
1 tsp. pepper
1 tsp. dried tarragon

1. Preheat oven to 350°.

2. Melt butter in large skillet.

3. Chop shallots into thin strips. Add to butter.

4. Chop the mushrooms and leek into thin slices. Add to butter and shallots.

5. Coursely chop spinach. Add to skillet and saute until wilted.

6. Transfer all the veggies to a colandar and press with the back of a spoon to squeeze out all the liquid. (It could be saved to make a tasty sauce!)

7. Grate the Gruyere cheese.

8. Beat together eggs, cream, salt, pepper, and tarragon.

9. Put veggie mixture in the pie crust. Layer Gruyere on top, and pour egg mixture over everything.

10. Put quiche in oven and bake for fifty minutes or until egg in center of quiche has set.

11. Remove from oven and allow to set for ten minutes.
